Adequacy of caloric and protein requirements in patients with texture-modified diet

Abstract

Introduction: It is estimated that 8% of the population experiences difficulty in consuming solid and liquid foods. Patients with texture-modified diet often have variable food intake.

Objectives: To measure adequacy of caloric and protein requirements in hospitalized patients with modified texture diets IDDSI levels 4, 5 and 6. To determine whether there is an association between adequacy and texture levels.

Materials and methods: Food intake was assessed using a 3-day plate waste method. The caloric and protein values were compared with the dietary reference intakes (DRIs) according to nutritional status. Percentage caloric and protein adequacy was calculated. Statistical analysis was performed using the Kruskal-Wallis test for mean comparison according to the IDDSI level.

Results: The sample consisted of 52 hospitalized patients over 18 years of age with texture-modified diet indication. The mean percentage of caloric adequacy was 72.31%, 79.35%, 83.9% for IDDSI 4, 5 and 6, respectively. Protein adequacy was 71.89%, 77.25% and 80.75% for IDDSI 4, 5 and 6, respectively.

Conclusions: There are no statistically significant differences in the degree of caloric and protein adequacy in each of the groups according to IDDSI levels. A tendency to present a higher adequacy of both caloric and protein requirements is observed as the IDDSI levels increase.
