Abstract

Food additives are among the substances experiencing exponential growth in the food processing market as a result of excess consumption of ultra-processed foods and the need for food by the growing population. Use and regulation are controlled based on traditional toxicological assumptions. However, under the new paradigm of how microbiota influences health, it is worth asking what is the relationship between food additives and the microbiota.
